@Justin - I use <a href="http://fosswire.com/2008/03/17/video-screen-capture-in-linux-with-recordmydesktop/" rel="nofollow">RecordMyDesktop</a> for capture and various tools to stitch things together (Avidemux) and export out (Mencoder, ffmpeg, ffmpeg2theora) to the required formats for the site.
I'll definitely have a think about putting a post together about my video workflow in more detail (including how it is encoded for FLV) if there is interest, but as I'm on holiday in a couple of days time, it might be a while before it sees the light of day!
